I was wondering if there are any opinions on what are good 'value' fish and inverts. By value, I mean cost of the animal vs lifespan/enjoyment/tank benefits etc.

Are there any species that give more 'bang for the buck' as it were?

I have found that as far as snails go Banded Tochus live for a very long time and are very easy, Turbos seem to die pretty quick in a reef I think they prefer lower temps, and you do not have to continually flip them back over like Astrea Snails.

As far as hermit crabs go, I prefer Red Scarlet Hermits.  They are very reef safe and seem to live longer than blue and red legs.

My 2 cents.

Fish depend more on size and age of system.  I would research each purchase to make sure it has a good survival rate and of course you like the look.  Marine Fishes by Scott Michael is good (or the internet).

When you come by I'll set you up with a couple different types of snails that breed in your tank. I havent had to buy snails in years aside from when I want to add a bit more diversity.
